Champagne and Heart Health: The Scientific Backing
It’s official: champagne is good for your health and can help prevent sudden cardiac arrest. This latest finding comes from the Canadian Journal of Cardiology, not some viral post on social media. Inspired by this uplifting news, I’d like to recommend some champagnes that feel like a celebration all on their own.
Bruno Paillard Première Cuvée Extra-Brut: A Classic Favorite
First up is the Bruno Paillard Première Cuvée Extra-Brut (Hedonism £44). Founded in 1981, Bruno Paillard quickly earned a reputation for excellence. I first tasted it in 1994 while at Laithwaites, and it has remained a go-to wine ever since. This blend of Pinot and Chardonnay uses 25% barrel-fermented base wine, adding richness and nuttiness. You’ll notice elegant peach, pear, brioche, and lemon tones. It tastes glorious on its own and pairs beautifully with baked fish, fresh seafood, and poultry.
Pol Roger Réserve (Songbird Wines £50.50) always brings joy. This classic blend features equal parts Pinot Noir, Chardonnay, and Pinot Meunier. Its white-gold color sparkles with fine bubbles, while orchard fruits, summer berries, and creamy yeast aromas rise from the glass. Medium-bodied, it balances soft yellow and tangy red fruit notes, vanilla spice, and a hint of salinity. The finish is long and dry, making it a reliable, comforting choice.
Taittinger Brut Réserve (Majestic £35 on a mixed six) is never absent from my cellar—except when it’s chilling in the fridge. Known for its elegance, this champagne also has substance. Its white-gold color hosts tiny, graceful bubbles. The bouquet offers classic scents of apple, peaches in syrup, red berries, and brioche. On the palate, pear and berries dominate, while citrus, hazelnut, and saline notes add complexity. It pairs perfectly with Dover sole.
If champagne lifts your spirits, rosé champagnes do it twice over. While I’m not a clinician, I find Veuve Clicquot Rosé (Tesco £57) truly life-affirming. Its mid-pink color features subtle amber shades. Aromas include summer berries, cream, apricots, and spices. On the palate, it’s elegant yet rounded, with red and black berry fruit, tangy citrus, and mandarin orange flavors finishing on a toasty note. Pink lamb and game birds make ideal food matches.
The PIAFF Brut Rosé (Champagne PIAFF £42.50) delivers exuberance. Raspberries, loganberries, redcurrants, and floral notes leap from its rose-petal body. In the mouth, red and black fruits mingle with hints of violets, creamy yeast, and crunchy, chalky minerals. This wine is perfect for summer parties.
For a wine that stimulates both mind and palate, try the Laurent-Perrier Ultra Brut (The Finest Bubble £66). At first tasting, I found it severe, lean, and punishingly dry compared to other Brut champagnes. But over time, I grew to respect and adore it. Its ultra-low residual sugar (0.9 g/l) and six years of bottle aging create a unique experience. This white-gold wine offers aromas of green apple, white peach, and flint. Flavors of lemon, grapefruit, white raspberries, and green apple follow. Bottle aging mellows these, adding nutty yeastiness and a honeyed mouthfeel. Serve chilled as an aperitif or with white fish, poultry, or roasted artichokes in butter.
Blanc de Noirs champagnes took me a while to appreciate. Many are produced cheaply, which gives a poor impression. But some fine houses make excellent Blanc de Noirs with healthy proportions of Pinot Noir. Take Champagne Palmer Blanc de Noirs (Finest Bubble, £50). A 50-50 blend of Pinot Noir and Meunier, aged five years in bottle, it’s beautifully structured. Expect white and yellow-skinned fruits, with red berries in the background alongside yeast, spearmint, and vanilla essences.
Blanc de Blancs champagnes use only white grapes, known for their refinement. The Ruinart Blanc de Blancs (N D John Wines £79.95) balances style and substance perfectly. Its nose blends pure white fruits with vanilla foam, hazelnuts, and hawthorn flowers. Initially fresh and clean, cellar aging adds richness with almonds, honey, lemon peel, and yeast. It’s sensational with seafood and pairs well with pâté or game birds.
Moët & Chandon Collection Impériale Création N°1: The Ultimate Experience
Finally, the Moët & Chandon Collection Impériale Création N°1 (The Finest Bubble £194) blends seven remarkable vintages. When I tasted it last year against Dom Perignon 2012, I preferred this one. It shares Dom Perignon’s sumptuous texture and dazzling complexity. Layers of white and red berry, pear, melon, lemon, and green apple mingle with mineral, floral, and spicy notes. This wine shines with pink fish, lamb, or monkfish.

You’ve probably encountered Phil Grant, 61, from Charlbury, maybe as his alter ego Wonder Woman, during his 30+ years volunteering for Muscular Dystrophy UK
Phil Grant has passionately supported Muscular Dystrophy UK since his son Christopher was diagnosed with Duchenne muscular dystrophy in 1990.
Although Christopher died four years ago, Phil continues volunteering in his memory. He explains, “When my son was diagnosed, it shocked us, but the charity provided much-needed support. We were fortunate to share 34 wonderful years with Christopher. He taught us patience and showed a great attitude—‘deal with the cards you’re dealt’ and keep moving forward.”
Phil often dresses as Wonder Woman for fundraising events like the Bidwells Oxford 10k and London Marathon. In fact, this year the charity recognised his tireless efforts by awarding him Volunteer of the Year at the Muscular Dystrophy UK President’s Awards, in partnership with Airnow Technology. Gabby Logan MBE, the charity’s president, hosted the event, which honours those who make an exceptional difference in the muscle-wasting community.

Once again, the hospice team invites you to join the Rainbow of Ribbons hospice fundraiser, a heartwarming event that brings colour and joy to every person they care for. This fundraiser encourages the community to create a vibrant rainbow of ribbons, symbolising hope, remembrance, and support for Sobell House Hospice.
Remembering Mickey Lewis: A Legacy of Love
One person for whom the ribbons mean a lot is Zach Lewis. His dad, Mickey, an inspiring local footballer, manager, and coach, passed away in 2021. Zach and his wife Suzanne have shared how they keep Mickey’s legacy alive through Sobell House’s Rainbow of Ribbons.
Suzanne says: “University Parks holds so many memories for us. Mickey coached the University of Oxford Football Team, and we often met his students there. Finding Mickey’s ribbon felt magical, like everything came full circle. Each colour has meaning, and each ribbon tells a story. Therefore, the event is not just remembrance — it’s a celebration of the man and Daddy we love.”
Hospice Heroes Taking on Challenges
Nicola Duckworth is swimming the channel in August with friends Steve and Carl. They hope to finish in under 15 hours; however, they will be happy just to complete the challenge. Living in Oxfordshire means limited sea swimming, so they train in lakes and make weekend trips to the coast. Similarly, in April, Ele and Graham completed a 24-hour cycle challenge in their garage and raised £2.6k. Ele previously did a swim challenge last summer in memory of her brother-in-law, Justin, and returned to support more this year.
Honouring Sandra: London to Paris Bike Ride
John Hill will ride from London to Paris on 31 July with five friends. This ride is in memory of his wife Sandra, who was cared for by the hospice community team at home in 2020. John and Sandra took on this challenge with friends in 2016. Six months later, Sandra was diagnosed with cancer. Now, John and his friends ride to remember her and raise awareness.
The Ashman Family’s Fundraising Triumph
The Ashman family recently held another spinathon, raising their total to over £12k! Upcoming events include Steve’s Tenby Ironman in September and three family members running the Oxford Half Marathon. Additionally, Pete is aiming for a place in the 2026 London Marathon. Thanks to their incredible commitment, the hospice team is deeply grateful for their ongoing support.

Chef John: A Culinary Journey from Lancashire to The Greyhound Inn
John, a classically trained chef, moved from Preston in Lancashire to London in 2003. He began his apprenticeship at the National Portrait Gallery’s Portrait Restaurant, kickstarting his culinary career.
A Passion for Fine Dining and Michelin Stars
After gaining valuable experience in various fine dining venues, John honed his skills at Michelin-starred Paul Heathcote at Longridge. Later, he joined Marco Pierre White’s pub group in Oxford, followed by a Head Chef position at Newbury’s Manor House Hotel. There, he earned their second AA Rosette. After another time in London, John returned to Newbury in 2019, settling with his young family.
Simplicity, Flavour, and Tradition
“I have fond memories of my Grandma’s weekly baking: jam tarts, butter pies, and Eccles cakes,” says John. “Growing up, I admired Gary Rhodes and Marco Pierre White. Their ability to create dishes bursting with simple yet massive flavours is something I’ve always tried to replicate.”
With two AA Rosettes and an entry in the Good Food Guide, John’s cooking continues to attract attention. The Greyhound Inn, a charming pub-with-rooms, has earned a reputation for outstanding food and friendly service.
The Greyhound Inn: A Local Gem
In 2015, the Greyhound Inn reopened as a free house after being lovingly restored by Catriona Galbraith and Martyn Reed. The Grade II-listed building, along with its idyllic garden, is perfect for al fresco dining.
“I feature heritage tomatoes in my summer menus, alongside peaches and cherries,” John explains. “The oven-roasted chicken breast with chicken fat mash, slow-cooked leek, and onion is one dish I’m especially proud of. It’s the first dish I cooked here, and over time, I’ve perfected it.”
Craft Ales and Seasonal Dishes
The Greyhound Inn also offers four rotating real ales, sourced from the UK’s finest breweries. With local favourites like Butts, Ramsbury, and Little Ox, as well as seasonal ales, there’s always something new to try. The pub has won a local CAMRA award for five consecutive years, a testament to its dedication to quality brews.
John’s Guilty Pleasures and Memorable Meals
John confesses, “My guilty pleasure? Henderson Sauce on everything! We even gave it as a party favour at our wedding.” When recalling his most memorable meal, John fondly remembers dining at Trinity in Clapham: “Adam Byatt’s restaurant is phenomenal. Like Marco and Gary, he makes food taste incredible with simplicity.”
