Michelin-starred chef Tom Kerridge, is launching a luxury Beef Wellington box this Christmas, so why not treat yourself to something special?

The Beef Wellington Box generously serves four and includes a luxury 1.2kg, 30-day aged fillet of organic British beef, from family-owned Stokes Marsh Farm. Make a wonderful selection of hanging and free-standing porcelain ornaments for your tree, home and as gifts this month

Enjoy a relaxing day making festively themed decorations using porcelain at Micklems Farm in Knowl Hill on Thursday, 27th October.

Tutor Debbie Page will guide you through the challenges of working with porcelain to produce a collection of festive decorations for your home which make lovely gifts too. These will include both hanging and free-standing decorations, as well as tea lights or lanterns.

You will learn how to roll out porcelain, join sections together, cut shapes using templates and make perfect holes for threading ribbons through for hanging decorations.Debbie will also show you how to enhance your decorations after they have been fired using sharpie pens and faux gold leaf.

Suitable for all levels of experience, including beginners.

Your work will be taken away for firing and available for collection at Micklems approx 4-5 weeks after the workshop.

Local businesswomen Libby Witney & Chloe Blair tell us more about the RenARTgades Modern Makers Fair – the next one is Saturday 3rd September!

Libby & Chloe wanted to bring more attention to the amazing local makers and encourage people to shop small whenever they can.

They knew each other from going to markets with their individual businesses. Chloe, whose business is Peaches and Tea, is a polymer clay artist who makes jewellery, accessories, DIY kits and teaches workshops at various local locations. Bright and colourful earrings, focusing on bold shapes and designs are Chloe’s speciality.

She says: “I just make whatever makes me happy, what colours I’m drawn to at the time and go with the flow! I want to make things that make people happy – both the person wearing them and the people who notice them! I want to make art for your ears, I never have a plan of what I want to make, I just start making and follow the journey.” Everything is handmade in her Newbury studio and even her small children have shown an interest in clay, the colours, and the need for quality cookie cutters…

Libby is the owner of Magpie and the Mob, an online colourful shop of awesome things for your home and life, all 100% made and designed by independent UK makers. She also runs workshops with The Ugly Duckling Pottery Cafe where you can learn how to paint different styles of lettering on your pottery. The idea for Magpie and the Mob began during the 2021 lockdown, while Libby was teaching art remotely to her secondary school students. “I made it my mission to try and support all these makers who bring me such joy online, by buying from them and spreading the word in a time where physical markets weren’t allowed. When my husband said to me that I didn’t have the space or money to keep doing this, I turned it into a business! And it became Magpie and the Mob!”

RenARTgades attracted more than 700 visitors to their last event, with stall-holders saying it’s just what Newbury needs.

Q. What do you love about this area?
CB: “The people! There are so many people who appreciate the tiny businesses we showcase and understand the importance of shopping small to keep these brilliant businesses running.”

LW: “We’ve both lived here all our lives, we went to school here and grew up here. I love being this close to the canal and lovely places to walk, as well as some amazing local business where you will find me spending a lot of my time!”

Q. Why should we all support local?
LW: “People are always saying we need more independents but if we don’t support local businesses, they disappear. It’s so difficult for small businesses at the moment with the increasing prices, let alone having to compete with large companies, there are far too many billionaires in the world that don’t need our money!”

CB: “We have more bills and taxes to pay than Elon Musk! Your money to him is a drop in the insanely deep pond, to small businesses it’s dinner for tonight and fuel there and back to get the weekly shop – they need it and vastly appreciate it more than the bigger brands!”

Q. Do you think we all need more colour and creativity in our lives?
Both: “YES! Every single person has the ability to be creative, you just need to find your outlet. There are so many benefits to getting creative, some countries around the world have even started prescribing creative activities to help people with their mental health. The world can be so grey and miserable.”

The festive period isn’t normally associated with healthy eating, but Dr Michelle Braude of nutrition practice The Food Effect, says it doesn’t have to be this way and that many of the foods we often associate with Christmas and New Year are actually very healthy if used in the right way.

Grilled Salmon & Baby Potatoes on a Bed of Greens & Barley

A showstopper of a dish that will leave your guests asking for more.

Ingredients:

• 1 whole side of salmon fillet (around 1kg), with skin removed
• 1kg baby potatoes, washed and cut in halves
• 8 cups mixed greens
• 250g cooked barley (or brown rice)
• 1 head of garlic
• 6 tablespoons olive oil divided
• ½ teaspoon dried rosemary
• ½ teaspoon salt
• ¼ teaspoon black pepper
• 3 tablespoons low sodium soy sauce
• ½ teaspoon dried mixed herbs
• A third of a cup of balsamic vinegar
• Salt & pepper, to taste
• Balsamic glaze – for drizzling

PREP: 15 minutes

COOKING: 40 minutes

SERVES: 4-6

Method:

For the salmon:

Heat oven to 200°C.

Toss baby potatoes with 2 tablespoons olive oil, rosemary, salt and black pepper. Cut a 1/4 off the head of garlic horizontally, and wrap it in foil.

Place potatoes and garlic on a parchment lined baking tray and roast in the oven for 40 minutes.

Coat the salmon with 2 tablespoons olive oil, soy sauce, dried mixed herbs and pepper. Place on another parchment lined baking sheet and place in the oven 20 minutes before the potatoes are ready. Roast salmon for 18-20 minutes.

For the dressing:

Blend together the balsamic vinegar, remaining 2 tablespoons olive oil, salt and pepper, and squeezed out roasted garlic. If too thick add a bit of water.

Complete the dish:

Combine a few tablespoons of dressing with the cooked barley, and the rest with the mixed greens. Arrange greens on a platter. Sprinkle the barley over the greens. With a large spatula place the salmon on the greens and barley and place the baby potatoes all the way around the salmon. Drizzle balsamic vinegar over the salmon to decorate.

Variation: You can also decorate with pomegranate seeds, flaked almonds or chopped spring onion

Christmas is not quite the same without homemade warm mince pies to enjoy. This granola inspired delicious recipe is bound to keep everyone happy using granola from Lizi’s Breakfast Range available from Waitrose, Sainsbury’s, Tesco, Ocado, Asda, Morrisons, Whole Foods, Co-Op, Booths and all good health stores.

Christmas Mince Pies with Lizi’s Original Granola Topping

These mince pies are a fun treat for all the family.

Ingredients:

• 1 whole side of salmon fillet (around 1kg), with skin removed
• 1kg baby potatoes, washed and cut in halves
• 8 cups mixed greens
• 250g cooked barley (or brown rice)• 1 head of garlic
• 6 tablespoons olive oil divided
• ½ teaspoon dried rosemary
• ½ teaspoon salt
• ¼ teaspoon black pepper
• 3 tablespoons low sodium soy sauce
• ½ teaspoon dried mixed herbs
• A third of a cup of balsamic vinegar
• Salt & pepper, to taste
• Balsamic glaze – for drizzling

PREP: 30 minutes

COOKING: 20 minutes

MAKES: 18

Method:

To make the pastry, rub together the diced vegan butter into the plain flour. Once they are mixed together, mix in the golden caster sugar and a pinch of salt.

Combine the pastry into a ball – don’t add any liquids – and knead it briefly. The dough will be fairly firm, like a shortbread dough.

Preheat the oven to 200C/gas 6/fan 180C.

Line 18 tin holes of two 12-hole shallow baking tins, pressing small (approximately walnut-sized) balls of pastry into each hole. Keep some of the pastry aside for the lids. Spread the pastry balls to make pie shaped cases and spoon the vegan mincemeat into the cases.

Roll out the remaining pastry for the lids. Use your star cutter (which has to be big enough to reach the sides of the pie cases) to create the pastry lids. If you’d rather use a different shaped cutter, ensure that the shapes reach the sides of the pie cases again.

Place the pastry lids on the pies, ensuring that they fit. Bake for 20 minutes until the pies are golden.

Leave the mince pies to cool in the tin for 5 minutes, then remove and cool on a wire rack. To serve, lightly dust with some icing sugar. The mince pies will keep for 3 to 4 days in an airtight container.

Local dad David Lamont, founder of Plastic Free Home, offers his tips on how we can enjoy a more planet-friendly season

‘Maybe Christmas doesn’t come from a store, maybe Christmas perhaps means a little bit more…” It’s not often that I quote the Grinch, but in this case Dr Seuss’ fictional character is spot on. Christmas is magical but it’s also a time of unnecessary waste. Here are our top tips…

1. Avoid the gimmicks
From pre-packed ‘reindeer food’ (what’s wrong with a carrot?) that’s bad for the birds, to Christmas Eve boxes, don’t get sucked in.

2. Presents
Think quality not quantity and avoid plastic. Wooden toys are popular again and look to ethical smellies, made from natural, cruelty-free and vegan ingredients. Give handmade gifts or experiences too – homemade nibbles, something knitted, a meal/afternoon tea.

3. Wrapping
Lots of wrapping contains plastic. It’s not an exact science but if you scrunch into a ball and it stays that way, it’s more likely it’s plastic free. Use recycled brown paper and/or reusable bags. Crucially, avoid plastic sticky tape! Paper tape is easy to buy online.

4. Cards
The obvious answer is to avoid them entirely but that may be easier said than done. Aim to buy cards that use recycled or FSC (sustainable) paper, free of non-biodegradable glitter, badges and plastic wrapping.

5. Crackers
Again, you could avoid. Or make your own or source reusable. If buying, look for those that don’t contain plastic toys and are recyclable.

6. Trees
If you already own an artificial tree, use it for as long as you can. In need of a new one? Consider a real tree that’s FSC or Soil Association approved. Or even rent a real tree!

7. Advent calendars
Make or buy a reusable one and fill with homemade or plastic-free treats. Foil-wrapped or Divine chocolate are better. Keep it traditional.

8. Food
Buy meat (and cut down) plastic-free from a local butcher, and veg unwrapped from a local greengrocer or farm shop.

9. Drinks
Wine bottles with a cork are better than screwtop. If you’re buying beer, avoid plastic packaging and go for glass over cans. For soft drinks, swap plastic bottles for glass or cans.

10. At the end of it all
Recycle and dispose of everything correctly. If in doubt, look online, contact your council or us! Prep bags or boxes ready for things like cardboard and recyclable plastic. Donate unwanted stuff to a charity shop or food bank.
