National treasure John Challis comes to Farnham Maltings this month – he tells us more

Enjoy an intimate evening with one of the nation’s greatest comedy actors, best known, of course, as Boycie in BBC1’s Only Fools and Horses, who will reveal secrets from behind the scenes.

In fact, the man who portrayed a used-car dealer in the beloved series had been destined to become an estate agent. However, a lack of application and a tendency to impersonate the partners led to a parting of the ways, much to his parents’ horror. After spotting an advert on the back page of The Stage, he joined a touring children’s theatre.

Having worked with some of the biggest names in show business, John will spill the beans about his Only Fools and Horses co-stars Sir David Jason and Nicholas Lyndhurst and friends and fellow performers including The Beatles, The Rolling Stones, Oliver Reed and George Best. He’ll also recall tales from his time in Dr Who, Coronation Street and other TV classics. A small cameo role in Citizen Smith incubated his best-known role. He played a policeman and decided on a very whiny voice, and was pleasantly surprised when John Sullivan, the script writer, said he loved the characterisation. He was further surprised when the script for Only Fools and Horses dropped through his door. None of the cast then knew what a phenomenon the show would become.

After John graduated from children’s theatre, he loved acting in thrillers. “One ambition of mine, though never achieved, was to appear in a thriller alongside James Stewart,” he says. But one of the astonishing plays he remembers seeing is Othello with Paul Robeson, Sam Wanamaker and a young Albert Finney. The love of the thriller is also reflected in his favourite books. “I think my favourite books are by John Grisham and Michael Ondaatje, but since moving to the Herefordshire countryside, these have been joined by historical books about the Welsh marches.”

John is looking forward to returning to this area of Surrey. Between the ages of 10 and 17 he was a boarder at Ottershaw School and remembers “many an enjoyable weekend cycling to and from my best friend’s house in Weybridge… To say nothing of picking up a guitar and joining a rock and roll band. Due to the fact it was a type of music not appreciated by the head a lot of the concerts were ‘underground’.”

October is all about wholesome, nutritious, heart-warming, health-giving food. Food replaces sunshine, warming us from the inside out rather than outside in! Katie Kindsley brings us her recipes…

 

Scallops with apple & bacon

(allow three or four scallops per person)

Perfect for this time of year, bringing scallops and apples together in perfect harmony, this is sour, salty and sweet success. Remove the rind from three slices of thick-cut smoked bacon and set aside. Chop the bacon into small pieces and fry in a little butter until brown. Peel and cut half a green apple into small cubes, heat 1tbsp of butter in a small pan and add the apple and bacon then continue to cook while you cook the rind in the pan just used. Add a small knob of butter and fry until the bacon fat renders. Add 50ml bourbon to the apple mix and let it bubble for a minute before adding 50ml maple syrup and continue to simmer so it reduces by at least half to a thick sauce. Place your scallops in the pan with the sizzling bacon fat and cook on high for a minute or so on each side, seasoning with salt until they’re nicely brown. Toss some watercress in a little lemon juice and heap on each plate, laying your scallops on top. Spoon over some apple and bacon mix and freshly grind some black pepper.

 

Thai noodles

 

This is versatile so use whichever vegetables you have to hand or whatever’s in season. All you will need to gather from your pantry is noodles, curry paste, coconut milk and fish sauce (or soy for vegans). Heat 2tbsp of coconut oil in a pan and sauté a finely chopped onion for about three minutes. Add three cloves of minced garlic and 1 tablespoon of freshly grated ginger, cooking until fragrant then add 2-3tbsp of red Thai curry paste for a minute and then a 400ml can of coconut milk, 1tbsp of honey and fish sauce to taste. Stir then boil for five minutes or until the sauce is thick. Add your veg at appropriate times so they are cooked but have bite (I used fresh corn kernels, broccoli and aubergine). Remove from the heat and stir in cooked rice noodles, Thai basil and serve with lime wedges and fresh chilli.

 

Boston beans with pork belly

Serves 4-6

Definitely a weekend treat to relish and as wholesome as a corn-fed farm boy. The night before soak 500g haricot beans in water for at least 12 hours. Rinse and place in a heavy, five-litre casserole pan covering with water by about 3cm. Boil hard for about 10 minutes then lower to a simmer, cover with the lid and cook for 1 hour. Take a 400-500g piece of pork belly (rind on), cube then add to the beans with 50g soft dark brown sugar, 3tbsp black treacle, 1tbsp English mustard, three peeled crushed garlic cloves and 3tbsp of tomato puree. Peel about 10 pickling onions and insert five cloves into one before adding to the beans with a generous seasoning of black pepper, giving a mix. Preheat your oven to 140°C, place the lid on and cook for 3 hours. Remove the lid and drag the pork chunks to the top before cooking for a further hour uncovered. The beans should be soft and the mixture glossy and thick, (cook for longer if it is still a little watery). Season to taste and remove the clove spiked onion before serving with crusty buttered bread and fresh coriander.

 

Blueberry buttermilk pancakes

Serves 2-3

My son will be raised on these and not just on special occasions, as they are easier to whip up than French toast and twice as delectable. A recipe to scribble down and shortly after memorise through repetition! Sift 200g self-raising flour into a large bowl then add 2tbsp caster sugar, 1tsp lemon zest, a lightly beaten egg, 1tbsp melted butter and 380ml buttermilk. Stir with a wooden spoon until combined (a few lumps will not matter). Add one or two handfuls of blueberries or raspberries, stirring gently to combine and without breaking up the fruit. Heat a small knob of butter in a pan and cook spoonfuls of batter on a low-medium heat for a few minutes on each side or until browned and cooked through. Serve with butter and maple syrup.

Celia Stone finds out more about John Ward, the blacksmith of Donkeywell Forge in Quenington

John Ward is not only keeping alive the skills of craftsmen, he is also interesting young people to take up and maintain its traditions, by from time to time recruiting new apprentices.

Very few villages have their own forge these days – as they also no longer have a post office, local shop or their own school. Quenington’s forge however differs in its line of work from those of older times, which carried out mainly farriery and the casual odd job of repairs to metalwork.

Although John Ward still carries out farriery, his main occupation is in blacksmithing and creating decorative architectural ironwork. This includes for churches, for private individuals, and at prestigious locations such as Buscot Park, working for the National Trust.

John, who has been at his current base for about eight years, followed an apprenticeship in February at the start of his career, but has always had an interest in the blacksmithing aspect and he now specialises in this.

People walking through the village of Ampney St Peter will be able to admire the new gates he has made for the entrance, and those who attend services at Compton Abdale will be able to have a safe passage up the steep and winding path to St Oswald’s Church with the aid of the handrail which the forge has made.

John works with architects and designers. A recent commission on which he has been working this year is four chandeliers to hang in a new wedding venue at Bolton Abbey, a stately home in Yorkshire.

The chandeliers are described by John as ‘gigantic’, measuring two metres high and two to three metres across. He expected the whole project to take about three months to complete.

Originally from Bristol, he started out in welding and fabricating, then having always had an interest in horses he started at the age of 22 his four-year apprenticeship in farriery, at the town forge in Malmesbury.

This was to stand him in good stead later in his career, when he was doing work for racehorse trainers. He shod a winner of each of steeplechasings most high-profile races, the Cheltenham Gold Cup and the Grand National. His Grand National winner was a horse named “Don’t Push It”.

But while farriery was his main focus during his apprenticeship, he also followed in his own time his interest in blacksmithing.

At the age of 27 he was able to start his own business which in this year of 2018 celebrates its 21st anniversary. He initially based the business in a workshop in Coln St Aldwyn, there concentrating on blacksmithing.

He moved to Quenington about eight years ago, to Donkeywell Farm, which is owned by the Ernest Cook Trust, a well-known supporter of the continuation of traditional skills and crafts.

John has a staff of four, plus apprentices. This is very much a family business, with his wife Fiona dealing with the secretarial side and their two sons and their daughter enjoying helping out after school and at weekends.

John takes satisfaction not only in the creation of his ironwork, but in seeing it in its new setting.

Once a project has been completed, he and his team carry out all the installations themselves. “I like new gates to settle in looking as if they have always been there,” he says.” If a client says that this is how they appear, then we have succeeded,” he says.

“The greatest thing is to make sure that we are proud of what we are making.”

Henley resident launches a new service on Friday, 31st August, to support people in recovery from drug and alcohol addiction

Towards Recovery is a new Community Interest Company (CIC) based in Henley developed to support people to initiate and sustain recovery from drug and alcohol addiction, including supporting families, friends and any professionals in contact with them.

This family initiative was launched by Henley resident Huseyin Djemil who has more than 18 years experience specialising in the criminal justice / drug treatment sector.

Huseyin underwent residential rehabilitation for class A drug use in 1986. After recovery he took on various roles within the government and not for profit sector, eventually developing a consulting business with the simple aim of improving the condition for addict, their recovery, and therefore improving the lives of the people around them.

Huseyin now works with an extensive range of UK and International charities, social enterprises, private and public sector organisations, central government departments, universities and local authorities.

Huseyin says: “Many people know what addiction looks like, we want to show people what life in recovery is like. We know that a life in recovery is possible as we are living proof of it, we know that people can go on to become responsible citizens and an asset to their community again. We help people by identifying their skills and abilities and building their support network, we know that this strengthens a persons recovery journey and gives them the best chance to succeed. We are here to help people who need the support themselves or family members looking for guidance.”

His project, Towards Recovery, has created a positive impact and the service has received National Lottery funding. With this support, Huseyin is launching a new service to his local community this Friday, 31st August in Henley, between  7-10pm.

Following in the footsteps of Thierry Henry, the next generation of football superstars enjoy summer fun with Arsenal FC

Young football fans, aged seven to 12, attended a free summer Skills School at the Burlington Danes Academy in West London, during the summer holidays, under the official club coaches of Arsenal Football Club, with support from The Little Foxes FC.

The kids were put through their paces on a programme specially designed by the Arsenal coaches to develop their agility, control, speed and precision.

The Arsenal coaches heading up the Skills School were Tom Hartley, Jason Mason and Luke Addy.  Simon McManus, Head Coach, Arsenal Soccer Schools, said: “The Skills School programme provides young footballers with a great opportunity to train the Arsenal way in a safe, fun and friendly environment.”

At the end of the Skills School each child received a medal plus a goodie bag including: exclusive Skills School jersey, drawstring bag and water bottle.

Heathfield School in Ascot proves its ‘Excellent’ rating by Independent Schools Inspectorate this year, when every student exceeded their GCSE prediction

When the GCSE results came in last week, it was smiles all round at Heathfield School in Ascot, for all girls had exceeded their predicted aspirational targets, with 100% of its students achieving A*-C / 9-6 grades in Maths and English Language, and 100% A*-C grades in Business, Classical Civilisation, French, History and Spanish. Every student taking History secured A-A*s and all those taking Latin a 9-7 grading. Half of students taking Chemistry secured a 9-7 and a quarter of students taking French also secured A*s / 9-8s.

The girls’ fortes in the arts also shone through – every student taking Music secured 9-8, four in five students taking Art 9-7 and half of all girls taking Drama 9-7.

Hermione Hunt-Davis triumphed with two A*s in French and History, five 9s in English Language, English Literature, Maths, Latin and Religious Studies, three 8s in Chemistry, Biology and Spanish and one 7 in Physics.

Sophia Adderley, next year’s Head Girl, also excelled with four 9s in Maths, English Literature, Geography and Art, two 8s in English Language and French and two 7s in Chemistry and Religious Studies.

Tansy Adam – who has starred in many school productions and won her heat in the vocal class in the RIBI Young Musician of the Year Competition – achieved 9 in Drama, English Language and Religious Studies.

Talented and promising art student Harriet Hooper gained a 9 in Art, while Lacrosse player Aisha Edwards, who was selected to represent the U17 South East London North Team in the Regional Academy Tournament in April earlier this year, achieved 7 in both PE and Maths.

Commenting on the results Headmistress Marina Gardiner Legge, said, “I’m absolutely thrilled with this year’s GCSE results and would like to congratulate each and every girl on their terrific achievements. The results are a glowing testimony to the breadth and diversity of education we provide here at Heathfield – valuing in equal measure academic achievements and success in sport, music, drama and the arts. Joseph Allen joins King Edward’s Witley in September as the new Head of English

A graduate of the University of Lancaster, Mr Allen has previously been Head of English at Reading Blue Coat School and St Swithun’s, Winchester, among other appointments in the maintained and independent sector.

The position at King Edward’s Witley will see Mr Allen assume teaching responsibilities for pupils studying for English as part of their GCSE, A-level and IB examinations, across a number of year groups.

Commenting on his upcoming position as Head of English, Mr Allen said, “I’m excited to be joining a school where English teaching already enjoys a position of strength, where I can play a pivotal role in driving the department further forward and make a genuine difference in terms of further stretching and challenging the most able pupils both in and out of the classroom.”

September summons our youngsters back to school, college and university. This may mean the start of somewhere new which is stressful for both students and parents alike.

Increased screen time, pressure to succeed and the inability to switch off can tip the nervous system into permanent “sympathetic nervous system” mode. This is the “fight or flight” mode the body originally evolved as a mechanism to protect us from imminent danger. The anxiety response in the brain causes a cascade of hormones with wide-ranging effects such as shortness of breath, a racing heart, paling or flushing of the face, sweaty hands… The list goes on and, if left unchecked, may lead to more regular and extreme symptoms.

Youngsters who suffer from anxiety may feel abnormal and isolated. Depression is a deeply personal issue and masks itself in many varied symptoms. Research by the World Health Organisation (WHO) has shown that perhaps the most effective treatment is personal empowerment of the sufferer’s own treatment. This means that they can learn to recognise and manage their symptoms, assisted by their parents.

Finding the tools that work for the individual is key to success. A regular exercise routine is both physically and mentally beneficial for health, especially within a group or team which will help reduce isolation. Regular sleep and a bedtime routine is very important, so turn off all blue light-emitting devices, avoid late food or drink (give at least two hours to digest) and avoid caffeine and sugary drinks after 1pm. Encourage children to express themselves by drawing or writing; it’s such a beautiful tool as an outlet to release thoughts.

Correct breathing is also vital – learn how to retrain the breath. The hormonal cascade during an anxiety response causes us to shallow breathe and suck in more air than we breath out, making the panic worse. A great technique is “The Big Breath”. Tony Ulatowski has used this with more than 400 students in west London, from pre-schoolers to secondary students, for the last year and has received overwhelmingly positive feedback from parents, teachers and pupils. Tony says: “One of the preschool teachers shared her story of a four-year-old girl with anger issues who has now learnt to take herself away, regulate her emotions, and just two or three of the big breaths help her feel better about taking control of her emotions.”

A healthy balanced diet including “live” foods, vegetables and fruits can be hugely helpful. Amazingly 90% of serotonin is produced in the gut. A study from Victoria, New Zealand in 2017 found patients with moderate to severe depression had a statistically significant improvement in symptoms on a modified Mediterranean diet. Dr Chatterjee, star of the BBC’s Doctor in the House, shows diet can make a difference. However, when was the last time your doctor asked you about food when you were worried about feeling depressed?

There are also some natural supplements which are safe, effective, non-addictive and adaptogenic, and that provide an evidence-based approach for mood imbalance and anxiety in children and teenagers. One of the most widely tested is the ancient spice saffron. Saffron targets the gut as well as the brain.

Dr Paul Clayton, Fellow at The Institute of Food, Brain and Behaviour, believes saffron should be considered in place of current therapies, which he believes are outdated and on off-target. He says: “By targeting core aspects of mood and anxiety, saffron works far more rapidly than the pharmaceuticals, which are shooting at the wrong target. In short, saffron restores normal nerve function in key areas of the brain. If you have chronic inflammation, the “brakes” are put on a few key processes. Saffron takes the brakes off. Moreover, it acts very fast (hours, not weeks or months), has no withdrawal symptoms, no side effects, and is safe to use with children.”
